Pure Punjabi Mithe Chawl Mix Method Instructions

Mithe Chawl instructions
This mix will make Mithe Chawl (Indian sweet rice) for 4 people.

Prep time: 2 minutes
Cooking time: 20 minutes
1 tablespoon ghee (or sunflower oil if dairy-free or vegan)
1 sachet of Pure Punjabi Mithe Chawl Mix (contains 3 elements: rice, sugar & spices)
485ml water
Method:
1. Start by opening up the Mithe Chawl kit. Take out the sugar and the spices and put them to one side (to use later). Now take the rice and you will need to wash it - put the rice in a large bowl and fill the bowl with water, swirling the rice and water with you hand as the bowl fills up. Drain and repeat 7 - 8 times, or till the water is clear. This step is very important, and shouldn't be skipped (it only takes a couple of minutes).
2. In a saucepan, heat the ghee (or oil) over a medium heat. Add the spices (from the sachet) and lightly sizzle for 1 to 2 minutes.
3. Add the washed, but drained, rice and stir over a medium heat for about 5 minutes. The dry rice will become almost slightly 'sticky', but this is normal - don't be worried.
4. Add the sugar sachet, and then add 485ml cold water (just from the tap, it doesn't need to be chilled water, just regular cold water).
The pan will splutter, don't be worried. Add the water in one go, quickly, and the spluttering will stop.
5. Bring the mixture to the boil, and then turn down to the lowest setting on your hob and put the lid on. Do not stir the rice at all. It is ready once all the water has been absorbed. You can check whether it's ready by using a fork to gently push some of the rice to once side, then you can see if there's any water at the bottom of the pan.
Sweet rice can be eaten hot, at room temperature, or chilled. We would not recommend re-heating the rice once it has cooled (due to the bacteria in rice).
